Mapping gold available

MARITIME SERVICE: Shipowners are invited to share the dividends with Seahealth after mapping catering and skills at sea. Mapping points among other things to where adjustments to the organisation of the galley area can have a good effect on diet/nutrition and in the final count, well-being and efficiency on board.

Are requirements for suppliers clear?

Is it clear who carries out which duties in victualling? Does the company have a standing on health and nutrition?

These are some of the areas that upwards of 200 cooks, masters, suppliers and shore staff say are critical for good, efficient organisation of catering on board.

The mapping process is part of Project Neptune being run by Seahealth with funding from the Danish Maritime Foundation.

Companies now have the opportunity to share this knowledge and guidance on how they can work on catering and the skills associated with the galley.

”We should like to present what the mapping shows. We have discovered gold in several places in the process and we naturally want to share our finds with those who can benefit from them. This especially applies to companies who can gain an overview of what might be needed to get catering processes to run smoothly. What action can individual companies take?

Is there possibly any low hanging fruit?” suggests project manager Annelise Ømand.

”There is valuable knowledge to be had from the mapping report. As a shipowner, it gives us a picture of the options we have for establishing better processes in and around the galley. Now it is a matter of developing some specific, usable tools. Seahealth is well underway and we look forward to seeing the results," says Hans Christian Orloff Petersen, Marine HR, A.P.Møller-Mærsk A/S and member of Project NEPTUNE's reference group.

With the mapping report as the basis and springboard, Seahealth is developing tools to also help comply with the tougher documentary requirements for hygiene as a result of MLC when the convention takes effect. The toolkit will also get to include a guide and template for creating a healthcare and catering policy in-company and guidelines for how to specify clear, appropriate requirements for contracts between the company and suppliers. There will also be tools especially for sea-going crew.
